Combined effects of pulsed electric field and ultrasound pretreatments on mass transfer and quality of mushrooms

This study aimed to investigate the effects of pulsed electric field (PEF), ultrasound (US), and combined pretreatments (PEF-US) on mass transfer, rehydration capacity, microstructure, nutritional quality shiitake mushrooms (Lentinus edodes). The results indicated that could accelerate transfer during hot-air drying process at 65 °C, resulting in lower time energy requirement than control. Meanwhile, low-field nuclear magnetic resonance (LF-NMR) analysis revealed better capacity pretreated groups untreated group. scanning electron microscopy (SEM) demonstrated significantly changed cell structure by developing intracellular space larger cavities facilitating mushrooms. Additionally, physiochemical illustrated pretreatment preserve color more effectively groups. Of groups, shortest was observed group (4.7 h). PEF-US mushroom also exhibited highest phenolics (224.17 ?g/?L) soluble sugar (3.90 mg/mL) levels. Overall, concluded a promising method for products improve efficiency, product control, value protection.
